Christmas Salad with Avocado Mayonnaise

A tasty alternative to the traditional Christmas salad. Prepare it with avocado mayonnaise and bring something fresh and nutritious to the festive table. Simple preparation, taking only 35 minutes, and the tasty combination is guaranteed to be a hit at your Christmas feast!

Salad Ingredients (6 servings):

  • 800 g potatoes
  • 1 yellow onion
  • 100 g pickles
  • 100 g peas
  • 100 g diced carrots
  • 5 eggs (hard-boiled)

Mayonnaise Ingredients:

  • 3 avocados
  • 80 ml olive oil
  • 2 tablespoons wine vinegar
  • 1 clove of garlic (optional)
  • 1 tablespoon Dijon mustard
  • 1 pinch of salt
  • 1 pinch of black pepper

Preparation:

1. Boil the eggs until hard (about 10 minutes) and, in another pot, boil the potatoes in their skins (about 20-30 minutes).

2. While the eggs and potatoes are cooking, chop the pickles into small cubes and finely chop the onion. Mix together in a large bowl with peas and carrots.

3. Prepare the avocado mayonnaise. Blend peeled avocados, add olive oil, wine vinegar, garlic, salt, pepper, and Dijon mustard. Let it chill in the refrigerator.

4. Peel and dice the boiled potatoes and eggs. Mix them together with the pea mixture and avocado mayonnaise, then refrigerate.

TIP: You can add quality ham to the salad.

Poppy-Coconut Raw Balls

Quick, super tasty, and healthy cakes that you can prepare in multiple ways. For preparation, you need only 25 minutes + time to set in the fridge.

Ingredients (about 20 servings):

  • 1 cup ground poppy seeds
  • 1/2 cup shredded coconut or ground walnuts
  • 3 tbsp cranberries or jam (plum/cherry)
  • 3 tbsp honey

Preparation:

1. Soak the cranberries briefly in hot water. Then grind them. If you prefer a simpler version, use plum jam instead of cranberries. For a slightly more acidic alternative, prepare with cherry jam.

2. Mix half of the ground poppy seeds with coconut and the other half with ground walnuts. For even better flavor, add a bit of rum. In that case, use slightly more dry ingredients to ensure the dough binds well.

3. Gradually add honey and ground cranberries (or one of the jams). Mix a thick mixture from which you shape the balls.

4. Roll the balls in coconut and let them set in the fridge.

5. Serve in decorative pastry cups or arranged on a platter in a Christmas style. The final creative touch is up to you.
