4 Healthy Christmas Recipes from Fitness Models

If you are looking for tried and tested healthy recipes for your Christmas menu, we got you! Our NEBBIA girls will tell you what they eat, cook, and bake during Christmas. All of them agree that the holidays are more about family, love, and harmony than about food. The following recipes are satisfying and nutritious which means you won’t overeat and subsequently be glued to the couch for an hour. Which recipe will you try out?

Healthy Chocolate Balls from Denisa

During the holidays you don’t have to limit yourself completely. You can stay in shape thanks to healthy desserts and exercise. I don’t have a sweet tooth, but if I really want something sweet, I prefer making something healthier. I love this recipe because it’s fast, healthy, and most importantly so tasty! Even though it’s a low-calorie dessert, watch out for the number of pieces you have at once.

Ingredients:

- 1 apple

- 1 cup of instant oats

- ½ cup of water

- 1 tbsp of honey

- 7 tbsp of shredded coconut + extra 5 tbsp for coating

- 1 tbsp of cocoa powder

- Cinnamon to taste

- 2 tbsp of crushed nuts

Instructions:

  1. Peel one apple and grate it.
  2. Mix the grated apple with the oats and add water – about ½ cup. I recommend adding less at the beginning and adding more to adjust the consistency since the apple will let out some liquid.
  3. Add the rest of the ingredients: honey, cocoa powder, 3 tbsp of shredded coconut, crushed nuts, and cinnamon.
  4. Mix up the dough well. If the consistency is too dense, add more water. Afterward, leave the dough to sit in the fridge for at least one hour, you can also leave it there overnight.
  5. Shape the dough into balls and roll it in the shredded coconut. Put them in the fridge for a while to rest.

This amount of dough will yield between 15 to 20 balls depending on their size.

Christmas Oatmeal from Rebeka

I can prepare this recipe every day and I still won’t get sick of it. It tastes a bit like a sweet treat, but it’s still low on sugar! It’s an amazing recipe for those who love sweet breakfast and at the same time want to feed their body with all the necessary macronutrients.

Ingredients:

- 150 g of reduced-fat quark (soft cheese)

- 30 g of rolled oats

- Pinch of baking powder

- 30 g of gingerbread protein (or any protein of your choice)

- 150 ml of water

- Cinnamon/gingerbread spice mix to taste

- 20 g of dark chocolate

- 1 pc of Lotus cookie

- Flavdrops or another kind of sweetener

Instructions:

  1. In a pot combine oats, baking powder, protein, and water.
  2. Stir continuously until oats have thickened.
  3. When the oatmeal is ready, turn off the heat and leave it to cool down.
  4. In a separate bowl mix the quark with flavdrops. I used the toffee-flavored ones.
  5. Combine the oatmeal with your quark mixture and garnish with some dark chocolate, crushed Lotus cookie and at the end just add cinnamon or gingerbread spice mix to taste.

Christmas Potato Salad from Klaudia

I think that traditional potato salad with mayo and delicious fish are an integral part of the Christmas Eve menu. Our menu is no different, I just tweak the recipe a little bit. Here it goes:

Ingredients:

- 500 g of potatoes

- 250 g of carrots

- 100 g of peas

- 3 eggs

- 4 pc of pickled cucumbers

- 300 g of Greek yogurt

- 3 – 4 tbsp of mustard

- Salt and pepper to taste

Instructions:

  1. Cook washed potatoes until they are soft. In another pot cook the peeled carrots.
  2. Once the potatoes cool down, peel them, and pass them through a potato cutter to make nice cubes.
  3. Chop the cooked carrots and pickled cucumbers into small pieces and add them to the potatoes.
  4. In the meantime, make boiled eggs, let them cool down, peel, and cut them into small pieces, and afterward, add them to the rest of the ingredients.
  5. Add the peas, mustard, and yogurt. Mix until well combined, add salt and pepper to taste.
  6. If you let the salad sit in the fridge for a few days, it will taste even better.

Salmon with Sweet Potatoes and Grilled Vegetables from Simona

Due to my workload and workout schedule, I don’t have that much time to bake healthy desserts. My routine doesn’t change in any way during the holidays. I meal prep everything, therefore I prefer making quick and easy meals. However, I also like to make my festive dinner special and that is why I have baked salmon with sweet potatoes and grilled veggies. I recommend this recipe to anyone looking for a healthier alternative to the traditional festive dinner.

Ingredients:

- 1 fillet of red salmon

- 1 sweet potato

- Vegetables for grilling (zucchini, eggplant, pepper, onion, etc.)

- 1 tbsp of herb oil

- Salt and pepper

- Spice mix for grilled vegetables

- Olive oil

Instructions:

  1. Heat up the oven to 200 °C and cover the baking sheet with parchment paper.
  2. Season the salmon with a bit of salt and pepper and drizzle it with the herb oil.
  3. Peel the sweet potatoes and cut them into circles. Wash the vegetables and cut them into the desired shape. I love using zucchini, eggplant, carrots, onions, and cherry tomatoes.
  4. Lay them evenly on the baking sheet. Season the sweet potatoes with a bit of salt and peppers. Season the vegetables with the spice mix. Drizzle everything with olive oil to taste.
  5. Put the baking sheet into the preheated oven for 20 minutes. Check on it every now and then, if necessary lower the temperature to 180 °C.
