  • 150g frozen spinach (you can use fresh too)
  • 1 CUP wholemeal flour
  • 1 CUP milk (coconut, soy, almond, ...)
  • 1 egg
  • 2-3 cloves of garlic
  • handful of chopped onion (or spring onion)
  • salt and black pepper
  • olive or coconut oil
  • slices of ham
  • mozzarella or any type of cheese


Thaw spinach. In a large bowl mix together spinach, flour, milk, egg, garlic and onions. Complete the mixture with a hand blender. If the mixture is too thick, pour milk until it has the perfect pancake consistency. Add salt and pepper to taste. Let the mixture rest for a while. Heat up the pan with oil and cook pancakes. You can put anything you like on the pancakes. I have added slices of ham and mozzarella and rolled them.They were delicious! :)
